Main Course

You may offer your guests, in advance, two (2) meat choices, and one (1) vegetarian choice from the following:

  • Braised grass fed beef shank served on morel scented polenta with pecorino, roasted celery root and beet puree, drizzled with truffle oil.

  • Free-range bison tenderloin seared and served with a Jerusalem artichoke risotto, local honey, and candied vegetables.

  • Dry aged 6 oz reserve beef tenderloin, with smokey mashed potatoes, beetroot purée, braised leek, and a vanilla jus.

  • Mariposa Farms duck confit served with a cedar-citrus gastrique, butter poached fingerling potatoes, and pumpkin seed kale pesto.

  • Seared organic salmon served with a maple-orange beurre blanc, lemon herbed wild rice, and market vegetables.

  • Green olive braised free-range chicken thigh served with lemon-thyme spinach galette, and sweet fig chill relish.

  • Marinated oven-roasted chicken breast stuffed with select cheeses & sun-dried tomato, served with caramelized yellow flesh potatoes.

  • BBQ gruyere & apple stuffed pork tenderloin with grilled peppers and baby spring potatoes.

Authentic Italian smoke cured porchetta abruzzese, served on a panino with classic jus.

Japanese Street Ramen

Using a wild mushroom infused Shio broth, kansui ramen noodles,

and topped with five-spice cha sui crispy pork, sprouts, greens & aromatics.

Angus’ Butcher Block

Roasted dry-aged angus beef tenderloin, served with broiled gruyere mashed potatoe rosettes, sautéed asparagus & cognac jus.

Pasta Mio

Create your own perfect pasta with a choice of penne rigate, pappardelle or cheese ravioli. Toss with either marinara, smoked alfredo or bolognese sauce, and add your choice of chicken, shrimp or Italian sausage, garnished with chilli flakes, cracked pepper, and parmesan. Includes a side salad.

Spanish Valencian Paella

A selection of beef, chicken, shrimp or chorizo sausage served over an aromatic, pine-smoked bed of Spanish saffron rice with ajillo butter.

A selection of assorted fruits, pretzels, churros, waffles, biscottis, & marshmallows, served with decadent warm caramel, white & milk chocolate dips, and a tier of specialty chocolates.
